This 2017 Wild Ferment Chardonnay is the first vintage of our “Wild Ferment Chardonnay” series not sourced from our estate vineyard. This edition contains a fine variety of certified organically grown grapes. A delicious balance of refreshing acidity and sumptuous oak flavours, this is a chardonnay poised between drinkability and age-ability; enjoy now, but cellar for 3-8 years and enjoy an evolved experience. Chicken with sauce Supreme, cream-based pastas, or heavier seafood dishes such as grilled salmon or cod would be excellent pairings with this chardonnay.

"This is ProCert certified—organic and biodynamic, suitable for vegans and vegetarians. Alluring aromas of baking spice, vanilla and toasty oak mingle with wisps of yellow plum and green pear on the nose of this medium-full bodied stunning chardonnay. Sweet-tinged entry flavours of yellow peach and plum meld nicely with back-palate flavours of green apple and lemon curd. The finish and aftertaste tingle with ripe-fruit flavour and racy tang decorated with deft balance and charm. Delicious now, short to medium-term cellaring will enhance even this fine wine."

"The Wild Ferment 2017 is the first to not be sourced from estate grapes and is instead an amalgamation of growers’ chardonnay, all organic. What the “wild” brings is a foil to the wood in a way that certainly the Saunders does not effect. Here the complexities are extended, magnified and variegated. More savour, herbs, tisane and a cured porcine gastronomy. Like top notch lardo or a spread made for and with the smell of yeasty, warm bread. You now know who you are to get withy this special chardonnay."
